On my last post, I shared Susan Pridmore’s vegetarian side dishes for Thanksgiving. This week it’s time for Vegetarian Thanksgiving main dishes… and yes, she did it again! As you can see in the photos, they are not your old boring Thanksgiving vegetarian options. Far from it. Many of them really are show-stoppers and even omnivores will want to have a bite… or a lot more!

OMG, don’t you think these dishes seriously look gorgeous? I want to eat all of them right now! I might even skip turkey all together if I see some of these on the Thanksgiving table, because they look soooo pretty and are begging me to try.

The image you saw on the top (and the skinny ham looking thing on the top left of the above image) is hasselback butternut squash, not ham.

These pomegranate seeds look as if rubies or garnets are sprinkled on top. Actually they should be called pome-garnet! (Easier to spell too, especially for someone like me!) By the way, Susan’s tips on how to hasselback butternut squash is genius!

And that stuffed pumpkin… such an abundance of fall produce…

I’ll probably dream about these every night until Thanksgiving.

So with these dishes you are all set this Thanksgiving! Whether you have vegetarian guests or not, you may want to consider some of these options. And your plant-based guests will appreciate you, BIG TIME, as they won’t have to feel left out, or resort to yucky fake turkey thingies.

Better yet, share this with your guests and ask them to make a dish.

Well, my family might tease me that my main goal is always to minimize my own effort, but let me say this, I’m trying to figure out the way to accomplish the maximum results with minimum effort. Because, yes I admit, I’m lazy and cheap, but the bottom line is, I love great food and am always looking for new and exciting dishes… I just don’t want to spend too much time on them.
